A Christmas roast pork makes for an exemplary main course during the festive season. We source all pork at Meatsmith from local rare breed pig farmers. As a result of this careful, slow farming, rare breed Berkshire pork is highly marbled and is melt-in-your-mouth delicious. These older breeds of pig also carry more fat, meaning they don't need such thick skin to keep warm - perfect for crackling! Pork is incredibly versatile - it can be lean or indulgent, cooked fast or slowly. We have many cuts available in store and online, whether you're roasting for two or twenty. Here are some of our favourites this pig roasting season:

  • 12hr slow cooked pork shoulder- For a Christmas roast pork with crackling, our slow cooked shoulder is superb. One of our best sellers, with foolproof cracking every time - because crackling is one of life's purest pleasures. The shoulder is scored, seasoned and cooked sous vide in our smoker for 12 hours, retaining every bit of moisture and flavour.
  • Pork rack - The unsung hero of the meat racks. We can cut to any size, depending on how many or how hungry you are. This is a fantastic roast - just rub the skin with a little oil and a lot of salt, roast at 22℃ for 10 minutes to get the crackling going, then reduce to 180℃ for 30 minutes.
  • Porchetta - Pork loin or belly rolled with chilli, garlic, parsley, lemon zest, fennel seeds, salt and pepper. Trussed, scored and ready for roasting, it can be cut to any size. Roast it similarly to a rack - in a hot oven for 10 minutes and then reduce the heat for the remainder. Enjoy it as part of your Christmas pork roast dinner.
  • Whole suckling pig - It's hard to imagine a more impressive and delicious way to feed a group than a whole rare breed suckling pig roasted over coals. Our butchers will dress it ready for roasting and attach it to your own spit or a hired one. We like to serve our suckling pig with some fresh salads, sourdough bread and a healthy stash of condiments.
