How to cook a rolled pork loin roast

Our rare breed pork is sourced from Glen Eyrie Rare Breeds Farm in Victoria's Goulburn Valley and Beachport Berkshires in South Australia's Limestone Coast. Remove your pork from its plastic the night before, and place on a tray leaving it in the fridge overnight.

Take it out of the fridge an hour before cooking, and preheat your oven to 200°C. Pat the skin dry, and salt skin generously.

Place the rolled loin on a wire rack and roast for 30 minutes. Reduce the temperature to 150°C, and roast until the internal temperature is 60°C when probed, or until the juices run clear.

Rest for 30 minutes covered loosely in foil. Rest for 30 minutes before carving.
