From the weeknight ease of chicken schnitzels for the family, to a slow cooked duck leg cassoulet or a whole turkey to celebrate with on Christmas day, our poultry offering has every occasion covered.
Sourced from a number of producers across south-eastern Australia, all birds are free range and skillfully prepared by our butchers. Seasonal items include corn-fed chickens and other Game Farm poultry, Macedon Ranges duck and Freshwater turkeys.
Bannockburn Chicken is located just outside of Geelong, where its free range hens have access to large grassy areas for foraging. Antibiotic and hormone free, frequent deliveries ensure the freshest product possible. Birds are available as whole chickens, best for roasting and poaching, or in a range of cuts and marinades.
Game Farm in the Sydney hinterland has been home to a number of specialty poultry breeds for over 40 years. The spatchcock, quail and corn-fed chickens found in our cabinets are all reared using small-scale farming methods and a hands on approach.
We source our whole turkeys from the wife-and-husband team Trish and Ian Simmons, who farm them about 40km outside of Shepparton, near the New South Wales' border. Numurkah Turkeys are true free range—they live outdoors where they can peck around during the day, before being brought inside and kept warm at night. They are happy, placid birds which translates to a delicious and rich flavour.
Additionally, corn-fed ducks are sourced from the Macedon Ranges, where free range birds roam happily through lush pastures. These slow-grown birds build a layer of fat that makes for the most plump and tender breasts, and flavoursome legs perfect for braising with bacon, prunes and kale.
