How is foie gras made?
Foie gras is delicious when used in a smooth charcuterie item like our parfait. It is made by processing the cooked Foie Gras with chicken livers,butter, shallots, garlic and thyme before sealing with a port jelly.
How is pâté made?
Pâté is made by simmering chicken livers with shallots slowly before being processed to a fine paste in a food processor. Butter, eggs, garlic, port, brandy and pepper are added to emulisify the mixture before the paté is left to refrigerate for a few hours.
