Half spiced duck

This semi-boneless half duck is seasoned in our house spice blend of white pepper, coriander, fennel, cumin, and quatre épices.

Carve and dress liberally with olives and veal jus, finishing with a scatter of fresh tarragon.

Available as part of our Winter Series, from  14 - 26 July.

Duck, white pepper, ground coriander, cumin, quatre spice, fennel seeds, black pepper, dried thyme, salt, ground juniper.
This is a fresh product, best used within 3 days. Please refer to packaging for more information.
Each half duck will weigh approximately 600g, enough for 2 people.
Roasted at 190 degrees for 45 mins, until the skin is golden and crispy. Remove from the oven and set aside to rest for 15 minutes, while you prepare the sauce to accompany, heat through some Gordal olives in some veal jus, carve the duck and dress liberally with the olives and jus, finish with fresh tarragon.
