This full seven-bone rack of veal is encrusted in wild chanterelle mushrooms, confit garlic, fresh thyme, lemon zest, and chopped parsley.
To lock in all of this flavour, we have encase the entire rack in caul fat, ensuring it stays perfectly moist while roasting.
To complete the meal, serve alongside the classic carrot recipe from our cookbook.

Each veal rack will weigh approximately 1.6kg, enough for 6-7 people.
Pre heat oven to 180c and roast for 1 hour or until internal temperature of 48c resting for 20mins to achieve medium rare. Serve with the carrot recipe from our cookbook.
