For the holidays this year, we’ve turned to our team to share a dish that captures the festive spirit of celebrations past. 

This is Rick's - a lamb leg torchon. It's a classic French butcher’s cut where a fillet is seasoned and rolled into a coil. Here, a boneless leg is stuffed with confit garlic, oregano, thyme, parsley and Dijon mustard, then rolled and wrapped in caul fat. The caul holds it neatly together and adds an extra layer of succulence.

This raw product will be vacuum sealed, please check packaging for use by date information. Any product ordered from the Meatsmith Christmas range will be suitable for consumption up to and including Christmas Day.
Each lamb leg torchon will weigh a minimum of 1.7kg, serving 5-6 people.
Preheat oven to 180 and roast for 60 mins, or until internal temp of 52C. Rest for 15 mins and serve.
