For the holidays this year, we’ve turned to our team to share a dish that captures the festive spirit of celebrations past. 

This is Justin's - a whole semi-boneless chicken stuffed with a rich pork farce wrapped around a log of foie gras, then encased in soft confit leek. Expertly trussed by our butchers, this ballotine cooks evenly and is incredibly easy to carve tableside.

Chicken, duck foie gras, leeks, butter, pork trim, thyme, chicken liver, garlic, quatre espices, black pepper, brandy, tarragon, salt, parsley, sage, egg.
This raw product will be vacuum sealed, please refer to packaging for use by date information. Any product ordered from the Meatsmith Christmas range will be suitable for consumption up to and including Christmas Day.
Each chicken ballotine will weigh a minimum of 1.9kg, feeding 6-8 people.
Preheat oven to 180c, roast for 1.5 hours or until internal temperature reaches 62c. Rest for 15 Mins.
