What is pork loin?
The pork loin is a cut of meat taken from the back section of the animal. At Meatsmith, we purvey whole rolled pork loins for roasting as well as a pork loin chop for grilling. A loin of pork is a favourite cut for roasting as it is relatively lean with ample skin for crisp crackling.
How to cook pork loin
We have a tried and tested pork loin recipe to achieve a mouthwatering roast dinner. Our technique for a pork loin roast is incredibly simple. The roast pork loin cooking time depends on the size of the cut purchased.
Take the rolled pork loin out of the fridge an hour before cooking, and preheat your oven to 200°C. Pat the skin dry, and salt skin generously. Place the rolled loin on a wire rack and roast for 30 minutes. Reduce the temperature to 150°C, and roast until the internal temperature is 60°C when probed, or until the juices run clear. Rest for 30 minutes covered loosely in foil before carving.
