What is scotch fillet?

Scotch fillet is a juicy cut of beef that is packed with flavour. It is sometimes called a boneless rib-eye steak, as it comes from the same flavoursome forequarter in the rib section of beef as the rib-eye does. This is an area of the beast that does not do a lot of work, meaning it is incredibly tender and delicious to eat when cooked with expertise. Our O’Connor scotch fillets are raised amidst Gippsland's fresh air, pristine water, and nutrient-rich pastures of wild clover and rye grass.

Scotch fillet vs Porterhouse

At Meatsmith, we are proud to have an array of different cuts ready for your next steak night both in store and online, these include porterhouse and scotch fillets. The porterhouse is a succulent cut that has many other names such as club steak, strip loin, sirloin, New York strip and more. Whatever you choose to call it, it is a delicious, tender steak that is sensational, particularly when served with one of our condiments. Porterhouse and scotch fillet differ as they come from different sections of the animal. Porterhouse comes from the hindquarter of the animal while scotch fillets come from the forequarter rib section.

Scotch fillet recipes

For scotch fillets, we don’t so much as offer a recipe but a technique. Scotch fillets provide a wonderful base for steak night. A great steak needs a perfect partner, and our house made condiments can elevate your steak experience to something even more delicious. Designed to compliment your steak, try our red wine jus. It is a classic sauce made from beef bones, carrots, celery, brown onions, thyme and red wine. To serve, simply pour the jus into the warm steak pan until heated and then spoon over the steak.
