Hailing from Emilia-Romagna, cotechino is the storied sausage of Northern Italy. Crafted from pork jowl, rind, and shoulder, its name is a nod to the rich ‘cotica’ (skin) within. Ours is made with rare breed pork, nutmeg, cloves, cinnamon and plenty of black pepper.
Simmered slowly for hours, it fills the kitchen with heady aromas of spice and slow‑rendered fat. It's traditionally eaten with lentils in the wintery Italian new year, bringing luck and prosperity, or so the legend goes.
Pork skin, jowl, shoulder, salt, cracked pepper, nutmeg, ground clove, cayenne pepper, cinnamon, garlic, parsley, dry white wine, mutton bung.
This is a fresh product, best eaten within 3 days of purchase. Please refer to packaging for further information.
Each sausage will approximately 500g, enough for 2 people.
Heat a large heavy based pot over a medium heat, add olive oil and then gently sauté some finely diced carrot, onion, celery and garlic for a few minutes. Add the Cotechino and enough chicken stock to cover the sausage, cover with a lid and turn the heat down to as low as possible. Cook for 3 hours, remove the sausage and set aside to rest. Serve with warm lentils.
