Duck ballotine with fig & hazelnut
An Aylesbury duck ballotine prepared with ducks from the Macedon Ranges. It is a deboned duck stuffed with fig and hazelnut then trussed to ensure a juicy and even cook.
A whole deboned duck, dried fig, roasted hazelnuts, pomegranate molasses, pork shoulder, allspice, nutmeg, garlic, parsley, white wine and yellow mustard seeds.
This fresh product will be vacuum sealed, please refer to packaging for use by date information. Any product ordered from the Meatsmith Christmas range will be suitable for consumption up to and including Christmas Day.
Each duck ballotine will weigh a minimum of 1.3kg, feeding a minimum of 6 people.
Preheat oven to 180c Sear the ballotine in a hot pan until light golden brown Transfer to a wire rack and roast for 90min (alternatively – roast on a bed of vegetables). Remove from oven when internal temperature reaches 60C and rest uncovered for 15min before carving.
