We think everything made with koji is completely delicious. This white mould, used in Japanese kitchens and distilleries to produce soy sauce, miso, and sake, has a remarkable ability to enhance flavour. For this rare breed pork scotch, we’ve used shio koji—a seasoning derived from koji—as a marinade. It gently tenderises the meat and brings depth alongside garlic and spring onion. Rolled in toasted sesame seeds, it’s best slow-cooked and served with steamed rice and wok-tossed gai lan. Any leftovers are excellent stirred through noodles.

This is made with Pork Scotch, Garlic, Shio Koji, Spring Onion, Sesame Oil, & Toasted Sesame Seeds.
This is a fresh product, best cooked within 3 days. Check packaging for use by date information.
Your rolled Shio Koji pork scotch will weight approximately 800g, feeding 3-4 people.
Preheat oven to 160 C. Roast for 1.5 hours or till internal temp is 70C, rest for 10 mins before carving to serve.
