Chicken Taco Skewers

Let's be honest here, tacos are for every day of the week, not just Tuesdays. A family favourite for those young and old, there is something about a table laden with spiced, grilled meats, tortillas and salsa that brings us all together (even if there is a small argument about who has the last of the guacamole). Fancy Hanks has made taco night even easier with their Taco Rub. Here we use it to season chicken thighs, though, it is delectable on any meat that enjoys a nice, quick sear.
Ingredients
5 large boneless chicken thighs
Fancy Hanks Taco Rub
1 tsp olive oil
SERVE WITHWarmed La Tortilleria Corn Tortillas
Fresh lime
Guacamole
Shredded lettuce
Sour cream
Method
Cut each chicken thigh into 6 pieces, roughly 2cm x 2cm. Place the chicken into a small mixing bowl. Season liberally with the Fancy Hanks Taco Rub and mix well.
Thread the chicken pieces onto 6 skewers (approx. 5 pieces per skewer). Preheat a grill to a medium/high heat. Use a pastry brush to lightly brush the skewers with the olive oil. Cook on the grill, turning frequently for around 8-10 minutes until evenly charred and cooked through. Rest for 3 minutes, then serve with your warmed tortillas and all your favourite taco trimmings.
