


Beth’s Aged Great Ocean Duck

"It might seem unusual for an Aussie Christmas, but duck pancakes have become a tradition in our house. When I was in primary school, we hosted an exchange student named Rio, who told us her family always included duck pancakes in their festive celebrations. We loved the idea so much that we adopted it, and now it’s something we still do every year. A little piece of her tradition became part of ours."
This large duck from Great Ocean Ducks is glazed with Marionette cassis, star anise, Shaoxing wine and Chinese five-spice, then aged for a week in our Meatsmith duck room. To prepare it at home, add an extra layer of lacquer and roast it, serving it with roasted onions, orange segments and a rich red wine jus. We eat the leftovers with spring onion pancakes for lunch on Boxing Day.
