Each rabbit ballotine will weigh 1.2kg and feed 4 people.

Start by pre heating your oven to 160 degrees. Place the ballotine on a rack and into a roasting dish, drizzle over a tablespoon of olive oil and a sprinkling of salt, Transfer to the oven and cook for 40 mins, remove from the oven, and set aside to rest for 10mins before carving. Best served with a simple jus and some fresh chopped herbs.
