How to cook a Raw or Green Ham
If you purchase a ham from us that is raw or pickled, use these instructions to cook your ham. The instructions for both styles of ham are the same.

Method
Pre-heat the oven to 80C. When it reaches temperature, place a large pan in the bottom of the oven and fill ¾ with warm water. This will ensure your hams stay moist.
Remove the ham from its packaging and pat dry with paper towel. Place the ham into the oven directly onto the rack and roast for 5-6 hours, depending on the size of the ham. When the ham is cooked, it should reach an internal temperature of 65C.
At this point, choose how to finish the ham. We prefer to allow the ham to cool before glazing.
