HOW TO COOK YOUR STANDING OCONNOR RIB ROAST

Ingredients
Standing O'Connor Rib Roast - 2-4kg
Sea salt
Method
Leave Rib eye roast for 40 minutes before cooking it.
Preheat oven to 220 degrees Rub Rib eye with sea salt, oil & chopped fresh herbs until lightly coated all over
Place on a roasting rack on an oven tray. Place into hot oven and cook for 20 minutes at 220 degrees to get colour, then reduce temperature to 200 degrees for:
- Rare: 15-20 minutes per 500g or 50 degrees internal temperature of meat using a thermometer.
- Medium: 20-25 minutes per 500g or 60 degrees internal temperature of meat using a thermometer.
- Well done: 25-30 minutes per 500g or 70 degrees internal temperature of meat using a thermometer.
Take it out of the oven and cover loosely with foil to rest for at least 20 minutes.
Cut bones away from the meat, then slice to serve.
