Our rare breed pork shoulder, slow cooked in our smoker for 12 hours.
One of our best sellers, with foolproof cracking every time - because crackling is one of life's purest pleasures.
The shoulder is scored, seasoned and cooked sous vide in our smoker for 12 hours, retaining every bit of moisture and flavour. You finish the cooking process at home - roast at 220℃ with 3cm of water in a roasting tray until the crackling is golden, blistered and crisp (60-90 minutes, depending on your oven).
Sold as a full shoulder (approx 3kg) (serves 8-10). Ingredients: pork shoulder, salt, olive oil.
