Our Wagyu beef and juniper sausage is house-made by our smallgoods team. It's inspired by the old school British combination of fragrant, earthy juniper and rich, tender beef. They are made Wagyu beef that we add confit garlic, juniper berries, bay leaves and rare breed pork to - creating a plump and juicy sausage that's a little bit fancy.
Pan-fry them, then make a rich onion gravy with the cooking juices. It's a snag best matched with buttery mashed potatoes, and a full-bodied locally made Shiraz like the one below.
