How to roast a Milking Yard Chicken

Milking Yard Farm in Trentham, Victoria. Milking Yard birds are prized for their slow grown, true free-range life. They are pasture-raised on open fields, foraging for grubs and greens. The result is a magnificent bird packed with a flavour reminiscent of the French Bresse chicken. We prefer to slow roast these birds, producing the most tender and flavoursome meat.

1 whole Milking Yard Chicken

Technique

Preheat oven to 160°C

Line a roasting pan with baking paper and rub butter and salt all over chicken

Place chicken breast-side up in lined roasting pan and roast for 2 hours until just cooked through. Your temperature probe should reach just close to 75C.

Remove from oven and rest for 20min. Carve then drizzle with the resting juices, olive oil and a healthy seasoning of salt.
